Crispy Herbes de Provence Chicken Thighs

This has become one of our favorite recipes lately. It's:

  • Delicious
  • Satisfying
  • Cheap
  • Feels fancy
  • Completely free of onions and garlic
  • And is easy to make!
What you'll need:
  • Bone-in, skin-on chicken thighs
  • Butter (1 tbsp for every chicken thigh)
  • Herbes de Provence (I like Trader Joe's) (1 tsp for every thigh)
  • A lemon, zested
  • Salt and pepper
How you make it:
  1. Preheat oven to 350F
  2. Line a cookie sheet with parchment paper
  3. Take chicken thighs out of package and pat dry with paper towels
  4. Melt butter and add lemon zest, salt, pepper, and Herbes de Provence. Stir until combined
  5. Using your hands, rub the chicken thighs with the butter mixture. Make sure to put some under the skin without tearing it. 
  6. Cook for 1 hour
