This has become one of our favorite recipes lately. It's:
- Delicious
- Satisfying
- Cheap
- Feels fancy
- Completely free of onions and garlic
- And is easy to make!
What you'll need:
- Bone-in, skin-on chicken thighs
- Butter (1 tbsp for every chicken thigh)
- Herbes de Provence (I like Trader Joe's) (1 tsp for every thigh)
- A lemon, zested
- Salt and pepper
How you make it:
- Preheat oven to 350F
- Line a cookie sheet with parchment paper
- Take chicken thighs out of package and pat dry with paper towels
- Melt butter and add lemon zest, salt, pepper, and Herbes de Provence. Stir until combined
- Using your hands, rub the chicken thighs with the butter mixture. Make sure to put some under the skin without tearing it.
- Cook for 1 hour
